Chicken Soup for the Soul.

This hearty chicken soup recipe is made to warm the heart and soul, and is great for shared dinners at the table. It should make a healthy meal for anyone convalescing, or just trying to keep warm. It is also very tasty. It will take about 4 hours to prepare and tastes even better if cooked the day before the meal. Just try not to overcook the second lot of the veggies if you do it that way.

Chicken Soup

Ingredients

One chicken

Soup pack: (chopped)

One Potato
One Turnip
One Parsnip
One Onion
Garlic five cloves
One bunch of Celery.

One bouquet garni

Two bay leaves

Chicken stock powder.

Pepper

Method

In a large soup-pot add the whole (thawed) chicken and half of the soup pack ingredients. Bring to the boil and reduce to simmer. Making sure that the water level stays above the chicken, simmer for an hour to one and a half hours until the chicken is tender. Skim off the scum with a spoon whilst cooking.

Remove the chicken and place on chopping board. Joint the chicken and remove the flesh. Set aside. Use a colander to transfer the broth to another pan, remove the vegetables and throw them away.

If you like you can hammer some of the bones and scoop out the marrow and add it back to the pot for added nutrition.

Now take the bones from the Chicken and place them back in the pot. Reducing on simmer and adding more liquid as needed. Simmer 2- 3 hours until the water turns white from the cooked bone.

Discard the bones; add the chicken flesh; the rest of the soup pack; the bouquet garni and, the bay leaves. Add the chicken stock cubes or salt to taste. Bring to the boil and simmer until vegetables are tender. The soup is now ready to serve. You can put the broth into containers to keep for stock for soups, risotto or casseroles.

Serve with buttered baguettes

If you like you can say this magic spell for which you will need a red candle. Or you can say a prayer.

Place the soup next to the candle.

Light the candle.

Say:

''Apollo, God of Healing
I call upon the assistance of thee
Bless this soup with the powers to heal
Apollo, God of Healing please assist me''

Blow out the candle.

Eat the soup yourself or have your patient eat it. Take slow sips. If the patient cannot have solids, just serve the broth.

Rest after the soup is eaten.


This soup should be excellent for treating flu, weakness, fatigue and other illnesses. If you have flu, go to bed for the night and, keep warm, right after the soup. The calcium from the broth is good for bones and teeth. It is also fine by itself as a entree or main meal in colder months.
